                   Dum Pukht Gosht Recipe

Dum pukht
Dum pukht cooking uses a round, heavy-bottomed pot, a handi, in which food is tightly sealed and cooked over a slow fire. Dam Pukht is a simple but delicious meaty dish that is prepared with a blend of different spices.

  • 1/2 kg mutton
  • 3 cups water
  • 1 cup curd
  • 1/2 cup regular atta (dough)
  • salt to taste
  • 2 tblsp oil
Ingredients for Marination!
  • 2-3 green cardamoms,
  • 1 tsp cumin seeds,
  • 2 pods garlic,
  • 1 black cardamom,
  • 1/2 cup corriander leaves,
  • 1-6 green chillies,
  • 4 cloves,
  • 1 inch piece ginger,
  • 6 black pepper,
  • 1/4 cup mint leaves,
  • 1/2 onion
Grind all ingredients til make smooth paste. You can use yogurt for making a fine paste and marinate the meat for 4 hours.

  1. Mix completely marinated mutton, curd and salt and keep aside
  2. Heat up oil in a thick-bottomed pan, add meat and water.
  3. Cover the pan for 45 minutes or till the oil leaves the masala.
  4. Cover the pot with a lid.
  5. Seal the lid with dough for 45 minutes on a slow flame.
  6. After 45 minutes cut off the dough.
  7. Dum pukht is ready serve hot with nan.
